The week before my gallbladder surgery, I had one overwhelming question: What on earth was I going to eat?
Anyone who has gone through gallbladder surgery knows that recovery is not just about resting. It is about nourishing your body with foods that are gentle, healing, and easy to digest at a time when even thinking about cooking can feel impossible.
Thankfully, one of my closest friends, Julie, introduced me to someone who would become one of the brightest lights in my recovery: Chef Yvette Kerns of Petite Cook Charlotte.
Before she ever stepped into my kitchen, we spent nearly an hour talking on the phone. She had been through gallbladder surgery herself, thus she understood exactly what my body would need in those first delicate days of healing. More than that, she understood the emotional side of recovery too.
As we talked, I realized our lives had unexpectedly crossed similar paths. We had both experienced profound loss. We had both faced major health challenges. And somehow, through all of it, she had chosen to pour her heart into feeding other people.

My breakfast on the first morning after surgery included delicate egg bites blended with cottage cheese and spinach, giving me protein, while sneaking in iron-rich greens for my anemia.
Lunch was a soothing chicken and bone broth soup with rice and vegetables that tasted like exactly what my body had been craving.
And then there were the honey-cinnamon baked apples (there was a pear version as well). I have no idea how something so simple could taste so extraordinary, but they instantly became my favorite part of recovery. Tender, naturally sweet, and topped with a cloud of honey-cinnamon lactose-free yogurt, they felt like comfort food in its purest form. Every bite reminded me that nourishing food can be both healing and delicious.
By dinner, I chose a simple but satisfying bowl of tofu, quinoa, and spinach. Packed with plant-based protein, fiber, and iron-rich greens, it was exactly the kind of nourishing meal my body needed as I focused on healing. I am not sure what was in her secret miso sauce, but I am determined to find out.
More Than Meal Prep
When I woke up from surgery, everything had already been taken care of.
Yvette had coordinated with my husband, delivered every meal to our home, carefully packaged everything, labeled it, and even organized our refrigerator so recovery would be as stress-free as possible.
Looking at rows of prepared meals waiting for me brought an incredible sense of peace.
For the first time in days, I was not worried about what I could eat or whether it would upset my stomach. I could simply focus on healing.
